Saffron creme brulee

Ingredients :

- 75cl of liquid cream

- 25cl of milk

- 120g of sugar

- 8 egg yolks

- 10 saffron pistils

1. One hour before, bring the milk and cream to a boil. Remove from the heat, add the saffron and leave it to infuse for one hour.

2. Beat the egg yolks with the sugar until the mixture whitens then add it to the saffron milk/cream mixture.

3. Pour into cups and cook for 45 minutes at 80° C.

4. Remove from the oven, let cool and refrigerate for 2 hours.

5. When serving, sprinkle with brown sugar and caramelize 10 minutes in the oven on the grill position.

Anti-waste tip : don't throw away your egg whites !! On the contrary, take advantage of it to make recipes that only require whites like marshmallow or macaroons !!
