CROCUS SATIVUS
This is the scientific name of the bulb that gives rise to this magnificent mauve flower, whose bright red pistil, once dried, gives rise to the precious spice also known as RED GOLD: SAFRAN!

Grown on south-facing terraces in the commune of Mandagout in the south of France, near the Cevennes National Park, our saffron benefits from particularly favorable climatic conditions: hot, dry summers and cold, wet winters.
From planting the bulbs, through harvesting, pruning and drying, to weeding, La Safraniere des Cevennes grows its saffron using traditional, artisanal methods. Indeed, apart from the preparation of the soil, which can be partly mechanized, all other stages in the cultivation of our saffron are carried out entirely by hand. This painstaking work has paid off, as our saffron has been classified as a 1* grade since the very first year it was installed, guaranteeing you superior-quality saffron.
Alongside saffron cultivation, the planting of fruit trees, the upkeep of old orchards and collaboration with exceptional local farmers now enable us to offer you a range of saffron products, such as compotes, jams, syrups and chutney, made from local fruit and vegetables: sweet onions, reinette apples, raspberries, strawberries, figs...
